Iโ€™m Hungry

Currently hungry for more fruit smoothie, but Iโ€™ll hold off until the morning. I used the last of my yogurt tonight. We had waffles, chicken breakfast sausage, and a fruit smoothie with oatmilk, yogurt, and berries. The Husband likes a little bit of sweetener in his smoothies, so I added a tablespoon or so of one of the simple syrups in my fridge. I had whipped cream and maple syrup on mine.

I tried a new breakfast recipe as well and discovered that my stomach gets super duper rumbly if I eat that much dairy right away, so may not make it again. It was a breakfast cheesecake cup!

I just went to link to the recipe and the website said the account had been suspended, but basically itโ€™s a block of softened cream cheese, ricotta cheese, and yogurt. Blend them together, add sweetener and flavoring of your choice and a crust or granola on the bottom. This is it with plum cardamom jam. It was alright, but I think I might try another recipe. I would also add some more protein powder to these, if I was to make them again. They didnโ€™t quite have the staying power I needed.

Speaking of staying power, my younger brother had been inspiring me to eat more protein with breakfast. I have made eggs a couple of time along with some muffins. I canโ€™t always eat eggs for breakfast, occasionally they make me really sick.

We had a special weekend treat of baked banana bread donuts with chocolate glaze. They obviously needed sprinkles! I really want to make a bunch of baked goods with sprinkles and experiment with pictures of them for practice. It would be super cute, I think! Just look at how yummy these donuts look.

I used 5 Spice sugar in them for an extra twist and they were yummy. Very subtly spiced. The Brother approved, although the Husband didnโ€™t eat them. He doesnโ€™t like bananas.

Speaking of the Brother, we had some tasty dinners while the Husband was out of town for business. I think they were all Middle Eastern or Indian based foods and oh man… First up is beef kafta over pearl couscous and a cucumber tomato parsley salad. The salad had Zaโ€™atar spice in it. All the components were yummy!

He made falafel as well one night and they were so light and delicious. We had them with another tomato cucumber and herb salad. The recipe was apparently terrible and seemed to leave out some steps. It was from The Wizardโ€™s Cookbook which the Husband recently bought me.

Donโ€™t they look scrumptious? In the same cookbook, there was a recipe for โ€œRed Dragon Inn Spicy Brothโ€ and it was basically a curry coconut broth.

We had it with cooperatively made naan breads. Gosh, Iโ€™m going to miss having an extra cook in the house! The following picture should help explain why.

When I came home the next day, he was in the kitchen heating up naan, having cooked up some chicken, reduced the curry soup into a sauce and chopped up more romaine and parsley. I added yogurt on mine. It was so comforting and yummy! I will definitely make it again. Now that the Husband is traveling occasionally, Iโ€™m starting to plan more meals that he doesnโ€™t like.

More Brother made meals included Blackberry BBQ beef ribs and Spanish Spiced chicken. They were both excellent.

The salad has a couple garden tomatoes and arugula in it.

I donโ€™t have pictures of it, but the boys made themselves pork a couple of times. I had dahl and rice one night (Thanks Jeanne!) and made this ridiculously delicious chickpea curry that I would know like to eat about once a week.

The curry had chickepeas, butternut squash, carrots, green onions, and spicy, spicy fresh cayenne peppers from the garden. I had, I think, five little slices in the whole pot and had to pull two of them back out. It was making my nose run!

Weโ€™ve had some delicious favorites, pasta salad, chicken pot pie over noodles, and caprese salad with garden tomatoes and basil.

Also some delicious desserts. This is the strawberry cheesecake pie that I made for our anniversary. Side note, the Husband had stuck with me for 8(!) years! Well, married years, we were together for about five years before that too. I think he sticks around for the food mainly. ๐Ÿ˜‰

I experimented with a no bake cheesecake as well. We tried chocolate and key lime flavors. We ate the key lime before I could take a picture, but it had toasted coconut on top.

I made cookies to take to work with me and shared with the CNA class that shares the other side of our building. They made me a picture Thank you with all of them holding cookies. ๐Ÿ™‚ I was so embarrassed. I just wanted to me the cookie fairy! I made white chocolate lime coconut and chili chocolate cookies. They were well received. The Brother had to sample many, but I think decided the lime cookies were his favorite.

Homemade pizza made an appearance. This time it had turkey Italian Sausage, mushrooms, and onions. I made a quick red sauce and actually managed to cook the dough for long enough this time.

I didnโ€™t go too crazy for Shark Week this week. I only made three themed meals and two more shark themed clothing items. Well, five, if you count masks separately, I guess.

We did have Shark fin quesadillas and taco salad on Monday.

We had Shrimp Scampi on our actual anniversary.

And I had homemade arugula parsley pesto over shark themed noodles.

Oh my goodness, was the pesto good! Iโ€™m planning on making spinach and herb pesto tomorrow and freezing it all in tiny jars so I can pull it out in the winter and eat it when missing green things. I really enjoyed the pepperiness of the arugula. I can credit my friend K with helping me figure out that I like pesto. She sent us home the last time we visited with a couple of jars of different kinds of pesto and inspired me to make my own.

I think thatโ€™s all so far. I may be making an octopus cake for the end of Shark Week tomorrow, possibly a marble bundt cake. Also, I need ideas to use up the enormous thing of ricotta in my fridge. One of my planned recipes is cannoli filling ice cream. It looks really good, but Iโ€™ll have to make some other things too. I have a ricotta pancakes recipe too, so maybe Iโ€™ll try that. Still Here, Still Cooking!

Isnโ€™t the starry bowl pretty? My Mom was sweet and sent us two of them after I had mentioned that I wanted them, but couldnโ€™t justify getting them right now. I had cereal, yogurt, and fruit salad leftovers in it and it was the perfect breakfast size.

They didnโ€™t get here in time for the 4th of July breakfast (that I have rechristened โ€œIce Cream for Breakfast Dayโ€ to better explain it to people.). We couldnโ€™t find good blueberries this year. The ones in our shopping order were sneakily moldy, so I had to throw them out. I like breathing and mold makes that stop pretty regularly. We didnโ€™t have time to try and find more of them. We just used blue bowls instead!

Cereal on the bottom as is correct. Donโ€™t listen to my older brother!

We had strawberry shortcake with homemade โ€œBusy Day Cakeโ€ from the Better Homes and Gardens book for the 4th of July dessert with my in-laws. We sat in their gazebo in the yard and had delicious burgers and sides. I, of course, brought dessert.

My younger brother is staying with us for a bit and is an excellent cook, so heโ€™s made us a couple of good meals. I donโ€™t have a picture of the Instant Pot pulled pork, but have it on good authority that it was delicious. He made his own BBQ sauce and I believe added hard cider to it.

I do have a picture of the yummy chicken, potato wedges, and salad that he made. Yesterday he made jambalaya with smoked turkey sausage and shrimp. Weโ€™re going to miss him when he moves out.

We used a Chophouse spice mix from the Pepper Palace. We bought that on our California trip forever ago. I had forgotten how yummy it is. I even mixed my meat with my potatoes! I will definitely be making this again. The Instant Pot has been getting more use, since itโ€™s ridiculously hot.

One Instant Pot recipe that I was very disappointed in was a Moroccan Lentil Soup from I heart vegetables. It was so bad that Iโ€™m not even going to link the recipe. Also, it wonโ€™t let me link it for some reason, so it worked out. It was so watery and bland. I felt like I was just eating water with some weirdly cooked lentils in it. Blech. Even adding more spices at the end didnโ€™t help and I ended up wasting a lot of it. I accidentally added carrots and celery and even that didnโ€™t help. We had extra basmati rice from the pork that the boys ate that night, so I added those on the bottom.

I will not be making this again, although I would like to find a good lentil IP recipe.

I made a fruit monster salad too! Basically any fruit in my house gets tossed together. I love summer.

We had lava cakes again, although I made them in the oven this time. It makes 3 tiny cakes, so the perfect size for our dessert. Really, you canโ€™t go wrong with ooey gooey chocolate. Mmmmm…

I have made a couple of fun breakfasts. I used rhubarb from the garden for this rhubarb pecan bread. Itโ€™s good, but needs a little more flavor.

Weโ€™ve eaten a couple of fun fried dinners. I made chicken tenders with my own recipe. Penzeyโ€™s Cajun seasoning in the flour/panko mix breading and salt and pepper in the flour step. 3 step dredge and fry. Baked frozen fries and some fruit as well. They turned out pretty good. My brother looked at me with big eyes when I asked him how many chicken tenders he would want and said โ€œALL OF THEM.โ€ He had visions of a fried chicken sandwich the next day for lunch. ๐Ÿ™‚

Before my brother was here, we tried tempura fried shrimp and veggies, from Jet Tilaโ€™s cookbook.

The dipping sauce I had was just some sweet chili sauce. It was fun to try and pretty good. Pretty messy though! I especially enjoyed the zucchini. The Husband liked the shrimp and mushrooms, but spurned the other veggies, of course. We would make this again! It wasnโ€™t as scary as I thought it might be and fun to have a different sort of dinner.

The Brother doesnโ€™t eat a lot of dairy, so we had chicken sausage pasta. It was good, as usual. The sauce wasnโ€™t as thick as it normally is. I used our last jar of homemade garlic pasta sauce. Iโ€™m waiting for tomato canning season to start so I can make more sauce. Hopefully make all the jams I didnโ€™t finish last year too. This year, I will pick cooler weekends though. Our air conditioning is super cranky and old.

We had a veggie filled beef stir fry too. No recipe, just threw together everything until it looked good. I cheated and used hoisin in the sauce, so it had a good flavor.

Weโ€™ve been craving comfort foods lately, so the Husband requested a pot roast. It turned out very tender and yummy. I used basil and some seasoned salt along with the pepper and Wochestshire sauce.

I tried to make puff pastry, but ended up kneading it too much in the food processor and ended up with the flakiest pie crust ever.

We used it for chicken pies. They were yummy and now I know the secret for super flaky pie crust. Hint- itโ€™s tons of butter. ๐Ÿ˜‰

Show And Tell Sunday

Apparently a stomach bug is going round and the Husband and I both got it. I had a milder version than him, but we both had some icky days. We had to cancel our Harry Potter party, which was sad, since we had food all ready and everything is decorated. It was better to be safe than give anyone else stomach issues though, so cancelled. The Husband has two plays coming up in December and January, but we’re hoping to be able to reschedule. I thought I would show you the party foods I made and some other delicious meals.

These are the green tomato mincemeat tarts and the Cornish Currant Cake. They were both delicious.

The Currant Cake was originally going to be Cousin Jack cookies, but the batter was super weird and I got nervous.

So I did what any other self respecting Midwestern housewife would do- I called Mom in a panic. ๐Ÿ™‚ She suggested putting it in a glass pan and treating it like a bar cookie. It worked out very well!

The tarts were especially good with whipped cream. I was surprised at how much I liked the mincemeat. It had a hint of vinegar still, but was sweet and gooey. I would make it again.

It was very good and a hit at work. The Husband’s coworkers also liked it. We decided not to make too much more food, but I did make turkey pinwheel rollups for dinner this week. I was hosting my craft group this week, so didn’t get a picture of them, but they were pretty good and originally for the party.

Since we were sick, we had some soup, french onion and some buttermilk biscuits from the Better Homes and Gardens cookbook.

A favorite: Chicken Divan was also enjoyed.

Brinner is one of my favorite dinners when I don’t know what to cook, but the Husband isn’t terribly fond of it, so we don’t have it often. I call this one “Take that Ihop!” Cheesy scrambled eggs, buttermilk pancakes with macerated strawberries, and chicken sage sausages. And whipped cream, of course! The pancakes were from the Better Homes book as well.

Another quick dinner was Loaded Baked Potatoes. I forgot how good they are, so we’ll definitely be making them again. The Husband cooked his own potato and skipped the broccoli.

We had two poblano peppers from the garden, so I used them to make beef fajitas, along with a garden purple pepper. I’m planning on growing some next year too. The tortillas are homemade, so are rustic looking. ๐Ÿ˜‰

We had a fun day making peirogi with K and J and we got to take a bunch home. So of course, we had to try them! These are with a cheddar chicken sausage and fried in butter and olive oil.

I seasoned the waffle fries with Sandwich Sprinkle. The Husband just shook his head at me, but did admit they were delicious.

And for the last item, we have delicious popovers with plum cardamom jam. They were delicious!

I’m planning to make a couple of the party foods for just regular day foods. Who says Tuesday isn’t an occasion befitting a chocolate dragon shaped bundt cake? ๐Ÿ™‚

Eat all the Food!

Let me show you, first of all, what happens when my friends who cook and I have “just a simple game night!”

B and K came over with their spouses and our friend S, also came and there was so much food!

B made tortilla wraps and these little bruschetta toasts with a creamy cheese spread. Both were fantastic and the Husband has requested tortilla wraps for lunches soon.

K made Southwestern wontons, which were spicy and yummy! Her husband did the frying and he did an excellent job.

I made Hot Buttered Rum cupcakes from The Prohibition Bakery book and they were definitely alcoholic. Delicious, but not for kids! The cake part didn’t have booze in it, but the caramel filling was rum based and the frosting wasn’t cooked and had 1/3 of a cup of spiced rum. Man, they were delicious! I was kind and left the frosting off some of them, so that J and the Husband could eat them. They wouldn’t have liked the rum hit from the frosting.

There were also pickle wraps, which I was a little doubtful of, but were pretty good from K.

I didn’t realize that it might be intimidating for people who aren’t fond of cooking, or don’t do a lot of it to show up and be presented with an entire table full of homemade food. I honestly don’t care what people bring, or even if they bring anything, but I’ll have to work on being less intimidating, I guess.

We’ve had some other fun meals lately. Nachos were kind of like a party, but just for us.

We had these after the previous party to use up the Pico. It was a good idea!

Also, kebabs for the Labor Day canning day. I used the Galena Street rub on them, I believe.

Also, to use up a party leftover a while ago, we had pigs in blankets. I used all beef mini sausages from Costco and puff pastry. They were delicious, even if I did feel about 5 years old while eating them. ๐Ÿ™‚ For the record, I did have more veggies and fruit, but had started eating before taking the picture.

I made up a few recipes for chicken and steak. For the chicken, I baked breasts in balsamic vinegar, olive oil, and fresh herbs. We had roasted potatoes with it. The Husband always forgets that he likes balsamic vinegar, but he did enjoy it.

I was super proud of myself for the steak, because, not only did I season it (Montreal Steak Seasoning) and cook it without using a recipe; I also made a mushroom red wine pan sauce! Take a minute. I know it’s shocking. I’ll wait… ๐Ÿ˜‰

We had it with garlic mashed potatoes and I cooked up red peppers and swiss chard with some garlic and Sandwich Sprinkle. It was a tiny bit overdone, but not chewy or anything.

Another meal I made up lately was this burger, which we grilled a few weekends ago. We also grilled portobello mushrooms and I cooked bacon. I used an Applewood Smoked salt from The Salt Cellar at the Ren Fest. There was garlic and other spices as well. It added a nice smoky kick to the meat. My burger was topped with garden tomatoes and I had seasoned waffle fries (Sandwich Sprinkle!) and homemade spicy pickles with it.

I did use a recipe for the Carbonara from the Bacon 24/7 cookbook. I don’t generally have good luck with it, so wasn’t sure enough to wing it. It turned out pretty well, I think.

After my canning experiment, I had half a pint of jam left over, so I gleefully ate it on lemon poppyseed muffins for the last couple of mornings. I had chicken sage sausages and a hard boiled egg too.

I am still working on a cookbook review. I only made three of the recipes from it that I wanted to highlight, so maybe by the end of the week, I will have that done. I hope your day is going well and your food is as delicious as these recipes were!

Tuesday Treats

We’ve had some exciting new recipes lately and a few older favorites. With my schedule stabilizing, I have been able to do a bit more meal planning, along with adding an “on your own” day permanently into the rotation. That has been super helpful for Wednesdays or Thursdays. The Husband has been requesting more dishes too, which helps. Today we had chicken pot pie over noodles, which we haven’t had in a while. I was hungry, so forgot to take a full picture!

I loudly and snottily announced that I was going out to the garden to pick fresh herbs and the Husband laughed at me, but then told me that I should probably be Instagramming the whole experience. I was the one laughing then. Silly Husband! I was not Instagram dressed! They did look really pretty cooking down with the onions though.

Herb Butter Baked Chicken Breasts with Stovetop Stuffing and roasted carrots. I used the Sandwich Sprinkle on the carrots (seriously, I need a bigger jar of it) and fresh garden herbs for the butter.

Rosemary, thyme, sage, basil, and oregano were all included. I actually used some lemon thyme and basil in my strawberry shortcake, which we had for dessert.

This was the lemon thyme batch. It needed a little more herb in it, but it had a subtle lemony taste. The basil one came out much stronger, but basil is a stronger herb in general. I’ve been eating that one over yogurt too and it’s delicious!

So why all the strawberry things, you might ask? I dragged the Husband (yes, dragged, he doesn’t enjoy it) picking with me on Sunday after a panic moment of “what if they run out?!” We may have helped with that. We picked in between 12-13 pounds!

We tried a new farm, but didn’t like it as much, so will stick with the old one if we go together again. I might go on my own one more time, but I can also just pick some up from the farm market. I have a back quartered for eating or jam, and a batch left whole in the freezer. We have some to eat fresh in the fridge and some as shortcake. The shortcake ones will probably be made into jam, as they need to be used up quickly.

MMMMMMM! This recipe is soo good! I found it online at Pumpkin Inn Spice. https://www.pumpkinnspice.com/strawberry-pound-cake/. There were lots of delicious looking recipes, but this one said it was one bowl and that was good enough for me! I finally used the Bundt pan that Mom got me for Christmas.

I have a Strawberry Cheesecake Pie in the fridge that I’m super excited about too. I tasted the filling and man, oh man! I could have eaten it like a pudding! I’m looking forward to trying it tomorrow after it has set.

I’m still plotting what to do with the jam strawberries. I know I want to make Strawberry Rhubarb and I want to try an InstantPot Jam recipe too. We’ll see how ambitious I get.

We had a mental health professional game night this week and I forgot to get any pictures! We were having too much fun! I did make some things for it. We had a Caramelized Onion dip (https://pinchofyum.com/onion-dip) and pico. K brought a Chicken Bacon Ranch Dip. Of course, we had a veggie tray for the hummus, but no pickles. It wasn’t a formal party, Mom! I didn’t need the pickles! I made sure to tell everyone that I had some though, if they wanted them… ๐Ÿ˜‰ I also made Chocolate Fondue for a dessert dip. We ended up just talking instead of playing the second game, which I think says a lot about the group of friends we have. ๐Ÿ™‚

Oh, I did get a picture of the drink I made for the party the next day. I used the basil to make Basil Lemonade from Southern Living: Little Jars, Big Flavors. I have wanted to make that since I got the book, but my basil did not do well last year. You make a simple syrup infused with basil and then make up the lemonade.

It was deliciously tart and then mellowed over the course of the day. I will definitely be making more. You could taste the basil, but it wasn’t super overwhelming, which can happen with basil. It was so good!

We had cream sauce over pasta this week too. Since the Husband has convinced me that I can use up the half gallon of cream from Costco, I have been using it a lot more to be my go to meal.

Mine had asparagus added, but the Husband had the plain one mushrooms and the Sandwich Sprinkle. Gosh, I might need a spice intervention here! It’s just so useful! It has Italian herbs, salt, pepper, and garlic! Basically everything that runs in my cooking veins, I think. Eventually, I promise to use it on an actual sandwich! Knowing how things go, I’ll probably end up hating it in a sandwich. ๐Ÿ™‚

I had this first at Trader Joes and liked it so much that I decided to make my own. Lo and behold, I had actually pinned a recipe a long time ago! I used fresh parsley and basil in this. I didn’t have mint, so left it out. I had this at my sewing day with a friend and it was yummy! I would definitely make this again.

We had slow cooker BBQ flank steak tacos this week. I had them the second time as tostados, but I think I really wanted puffy tacos instead. For the leftovers, I added green enchilada sauce in a skillet and rewarmed it basically. We liked the meat. It was nice and tender. I was at work the first night, so only have a picture of the tostados. The Husband stuck with tacos.

I didn’t use a recipe for either dish, just threw things in the slow cooker or pan and added a few spices. Surprisingly, not the Sandwich Sprinkle! ๐Ÿ˜‰

The Almost Forgotten Food

I keep making food and then forgetting to post it! The Bad Birthday Fairy brought me a “wicked bad cold” – according to the hipster PA I saw at urgent care. I haven’t been cooking this week much, other than the chicken sausage pasta dish yesterday. Tomorrow it will be crockpot chicken soup.

I did make fresh bao last week. They were big dinner sized buns this time. The Husband was quite impressed. I had Brussels sprouts on the side. They had olive oil and “Sandwich Sprinkle” on them.

This was Fancy’s reaction to not getting to eat the Chicken Bao.

Poor thing… So neglected!

I tried Giada’s House Soup from Food Network, which was pretty good. Not our favorite, but we would eat it again.

With the soup, we had Cheese Twists from “Small Breads.” They tasted okay and were fun to make, but there were too many and the Husband didn’t like them.

We had Antelope Meatballs Stroganoff. It was weird and we’re not sure we like antelope. We’ll probably not eat more antelope. It had a strange aftertaste.

Another miss was this Crockpot Chicken Curry, also from Food Network. The Husband has decided he likes curry spice, but not by itself. It was too much for me to eat by myself. The Husband didn’t really comment on the coconut milk in it, so I think it wasn’t a strong enough taste. I wouldn’t make this again.

We had Ricotta Cheesecake with a Warm Berry Sauce from “The Home Cook” by Alex Guarnachelli. The Husband didn’t like it at all, he thought there were too many textures. There was a not sweet cookie crust. There was candied citron in it and it freaked him right out. My work people loved it though, so it didn’t go to waste.

I think it was too soft, but the flavor was delicious. I like the firmer cheesecakes though, so I don’t know that I would make this again.

We had Nancy Fuller’s Stovetop Mac and Cheese, which had cream cheese in it to make it extra creamy. It was pretty good, not too rich. Quick recipe too. I would use this again.

I attempted to have a Girl’s Night when the Husband was going to be gone, but ended up with a nasty migraine and a ridiculous amount of mini cupcakes with no one to eat them.

They were from the Cupcakes and Cocktails cookbook that I found in a secondhand book store. It has recipes for both and I used three of the cupcake recipes.

Margarita Cupcakes with Lime Buttercream (not the meringue frosting in the book,) Pomegranate Orange Cupcakes, and Chocolate Chili Cupcakes. The Pomegranate ones originally had green tea powder, but I have thrown it out apparently, so I used orange instead.

All three of them were tasty. The chocolate ones were never frosted and the Pomegranate ones had a glaze and were sprinkled with edible glitter. I would definitely make all of them again, but especially the lime buttercream.

I have been trying out some new ideas and will have another cookbook review coming up soon. I want to try one or two more recipes to get a good overall review first. My garden sprouts are coming along well, so I’ll share my gardening plans. For now though, I’m going to go nurse my throat and hope I can actually talk tomorrow. Food, Glorious Food!

I think it was pretty glorious at least. You can let me know what you think after the post. Not surprisingly, we ate a lot of Chinese food after the party. 

The Husband happily ate the shao mai the next day. We also had a fried rice dish that was an experiment and actually worked out! The Husband ate pork slices too.

This one is a meatball dish called Lion’s Head Meatballs from The Food of China. These were very good! They were browned and then braised for an hour and a half. Deliciously tender meatballs were the result. They get their name from the bok choy that they are cooked with that looks like a lion’s man. We did sub chicken for pork.

I had them with rice and sautรฉed Chinese greens- gai lan and bok choy, with mushrooms, green onions, and garlic. I used sesame oil for the saute oil. I’ve wanted to make these for a while. The Husband had just plain rice with his.

Another Chinese dish was West Lake Beef Soup from The Joy of Chinese Cooking by Lo Mei Hing. We have a similar dish when we go out for fancy Chinese food at Christmas with the Husband’s family and I was excited to find a recipe for it.

One interesting thing about this cookbook, which we found at a booksale last year, is that every single recipe, except desserts, calls for MSG. We omitted that, for obvious reasons, but it tells you how old it is.

After the soup, we got a little tired of Chinese food, so we had a creamy pasta and mushroom dish and a creamy shrimp dish. I only have a picture of the mushroom pasta dish because we were too hungry and devoured the shrimp dish.

The Husband also requested Chicken Marsala and it turned out delicious! We enjoyed it a lot. We had it with a salad and fruit.

I posted a naked pizza picture on Instagram because it was just too pretty to not document. ๐Ÿ™‚

The crust is the Pioneer Woman recipe, which I believe is linked here already. It makes a very nice friendly dough. You can also freeze it, but I have not had good luck with that.

Here’s a picture of the finished pizza. We used diced ham, mushrooms, and onions. It had homemade roasted garlic pizza sauce on it too and mozzarella cheese too.

I tried to give Fancy some cheese while making the pizza, but she moved and it all ended up on her back instead of her mouth. Silly girl! Don’t worry, she found it all and snarfed it all up.

I’ve also made waffles and muffins for breakfast and we had grilled cheese and canned soup tonight.

I’m still debating the next book. I kind of went through Food of China by Deh-Ta Hiusing and Nina Simmonds, pretty quickly, but have used a lot of it in before as well. I will do a little bit of a review for it here.

First off, the pictures are gorgeous! It’s a huge book, more of a coffee table book rather than a regular cookbook. The instructions are pretty clear. They requesting using light soy sauce a lot, which tastes horrible, so I generally just reduce the amount and add broth or water instead.

It’s a pretty extensive book, covering everything from appetizers, dim sum, main dishes, and desserts. We’ve used a lot of the recipes from it and they’ve turned out well. If you can find the book, I would get it. It’s definitely worth it. We got it as a gift, so I don’t know where it came from.

Fancy’s latest culinary adventure involved getting her Wobble open to cheat and eat the treats faster. Apparently sweet potatoes are a high value treat option.

She’s a smart dog, but we think it might have been by accident. Hopefully. We need her to not know how to do this regularly, thank you!

This week, I hope to pick a new cookbook to focus on for meals. We had a busy week coming up, so it may be a little interesting schedule wise. The Husband has another play starting soon. Auditions are next week. If anyone wants to come snuggle Fancy, I’m sure she’d be more than happy to accept any and all belly rubs. ๐Ÿ˜‰

I always have trouble knowing how to end my blog posts, so I guess I’ll just say “have a good night!”

Catching Up- Lunar New Year Party

I had good intentions to write this post for the last couple days and then had very bad news at work and a couple of migraines. I’m feeling better today, luckily.

Our Lunar New Year Party was lots of fun! We had planned to watch Crazy Rich Asians, but I went a little large on the guest list and we just don’t have comfy seating for 13 people! So we’ll have to watch it another time.

We had a Dim Sum theme this year and didn’t have a big main dish, just a bunch of smaller ones. But there was still lots of food. I went to the Asian market and got huge bags of produce, which we are now eating in everything to use up. I foisted some off on my in-laws today though, so hopefully we can finish off the rest of it.

We did have some store bought things this year. I’ve given up trying to make egg rolls or spring rolls. They just aren’t worth the work for me and never seem to come out right. We bought veggie spring rolls from Costco this time.

I also used these rice packet things from the Asian market. We get these for Dim Sum, but I can’t eat them because of the pork sausage that is in them. These ones just had dried shrimp, so I picked them up. They have some lovely spices too and were nice for lunch. They are wrapped in tea leaves, so you only eat the inside.

Another Dim Sum favorite of mine is the steamed Chinese Broccoli, or Gai Lan. It’s very much like broccoli in taste, but has leaves instead of the the florets. I’m sure I was the only one to eat it, but it made my heart happy. ๐Ÿ™‚

I did make two kinds of bao, although these are just the pork ones. I had 5 spice chicken bao as well, but they got eaten up quick. These were both made up recipes, although I did use a recipe for the Bao dough from The Food of China. I think I posted the recipe last year in the party post, but can repost it if you’d like it.

I roasted a whole pork loin in thinned out char sai sauce (Chinese bbq sauce) and chopped that for the pork filling. The chicken filling was ground chicken, sauces, bamboo shoots, garlic, and scallions in them.

We had pork shao mai, which was from the Husband’s family recipe book! According to the Husband, his mom and dad may have collected the recipes from his paternal grandma. Most of them are typed, but there are a couple that are handwritten. The shao mai were eaten before I started taking pictures.

The crab stuffed mushrooms were also from the book and were delicious! They called for a “creamy white sauce” so I made one to go in it. Fake crab was used. We’ve discovered that we don’t always need real crab. It was exciting to use it and there will certainly be some dinners from there as well.

The lettuce wraps look a little sad in this picture, as we had eaten most of them. These were made with ground turkey. These were my own recipe, meaning I threw a bunch of sauces and sauce ingredients at them until the filling tasted good. ๐Ÿ™‚

A new recipe, that I may not make again, was fried pork ribs. I texted the Husband from the Asian Market and he was very enthusiastic. I was, of course, thinking I didn’t have enough pork and would need one more dish. I was told they were good, but only fried half of them. They spit at me a lot and burned me.

The Husband baked the rest of them for dinner during the week and said that worked too. They marinated for a long time in a 5 spice based marinade and were then battered and fried, or baked. These were from the Food of China.

I highly recommend this website, as it has so many recipes and information on it for all your Asian culinary dreams. Someday I’ll get brave enough to make the coconut buns!

Back to the cakes though. I used blood oranges. The clementines were hard to find and I didn’t want to use them. I also didn’t glaze them and intended to make a frosting, but they didn’t get frosted. I did use super cute silicone cupcake molds though that had fortunes on the bottom!

Traditional almond cookies were also served. I used the recipe from my Food of China book and didn’t have blanched almonds and just left them off the tops. These didn’t brown, except on the bottoms, so be aware of that if you make them.

I think that was all the food! We didn’t manage a picture of the whole table, but I do have a picture of a table to share!

I found this Lego version of a Lunar New Year Dinner on Amazon really randomly while looking for the lucky coins we gave as favors this year. It was only available in Malaysia, but was somehow being sold by a toy company in New Jersey. I had no idea of any of this, the Husband found out after I gave it to him. ๐Ÿ™‚ One of his superpowers is research. It was perfect for us though! It even has the Chinese broccoli!!

It was very fun and next year we’ll have to do some experimenting with how we want to run it. I made all of the fillings ahead of time, which helped, but I still need to rethink how we do this party. I end up making everyone feel awkward, I think, while I’m racing around trying to finish things. When I suggested a potluck idea to the Husband, he said “I’m surprised you can even say those words!” Ha.. Ha.. Ha..

Harry Potter Party

So I was at a bellydance workshop all weekend and Fancy was excited to see me until the heat went on. Then she abandoned me for the heat vent. Silly dog! She’s currently snuggled under an extra sheet on the couch. The past couple of evenings, she’s been a brat until I’ve taken it down and made her a nest with it. ๐Ÿ™‚

But on to the party!  It was super fun and we, of course, had lots of food. I didn’t go to overboard though. We also didn’t have too many sweets, as we had a Honeydukes section with a ridiculous amount of candy. Honeydukes is the name of the candy shop in the wizard village. ๐Ÿ™‚

Side note, I finally got carded again for buying hard cider. The last couple of times I bought some kind of alcohol, I haven’t gotten carded and it’s a little weird for me… ๐Ÿ™‚ This time, I was also buying about 10 pounds of candy, so maybe that’s why. 

So I read the first book again and looked up recipes to make themed party foods. It’s not like The Hobbit, where there’s focus on foods, so there’s only a couple of things that are pretty regular. The Husband requested a large pile of chicken legs, as Ron, one of the main characters, is frequently seen two fisting chicken. ๐Ÿ™‚

They were alright, but I would bump the spices next time. 

Butterbeer is the main drink in the HP universe. I forgot to get a picture of it, but the recipe is pretty simple. Use heated apple cider, bourbon, rum, or brandy, ginger beer, and butterscotch sauce. Mix them to taste and top with whipped cream if desired. I got the recipe from a Buzzfeed round up of Harry Potter themed cocktails. There are definitely some more that I would like to try on the list.

I used a homemade butterscotch sauce too, because I couldn’t help myself… The recipe is linked in the butterbeer recipe, I can’t get the link to embed in the post. It’s a popsugar article.

For other drinks, we had spiced pumpkin cider, which I found at Aldi, pop, tea, and hot chocolate. The pumpkin cider was a little weird, but not unpleasant. It tasted more like spices than actual pumpkin. Pretty sure it was apple cider with spices.

I attempted to make butterbeer macarons, but they were a total disaster. I couldn’t even serve them! No pictures because when I tried to take them off the pans, they crumbled and looked a mess. I will try them again though! They were from Sensible Sara.

One recipe that did go right was Pumpkin Pasties. 

I looked at some recipes and then just made my own up. I used pumpkin puree, goat cheese with honey, honey, cinnamon, nutmeg, and cloves. They were wrapped in puff pastry and brushed with egg, cinnamon and sugar. They were delicious warm. 

We had Bacon Mac and Cheese cups for a dinner snack. I overbaked them a little, but was told they were still alright. They do not reheat well, according to the Husband. And yes, it’s kraft mac and cheese. ๐Ÿ™‚

We had egg cups, partially for brunch, but also to test as a recipe for the Husband to take for breakfast. They turned out to be pretty good and they will work for breakfasts.

I will probably make it again, as I forgot the baking soda and the cinnamon exploded all over the batter. I apparently also forgot to take a picture of the cake. I decorated it with a maple glaze, edible gold glitter, and green dust. It was cute. I have requested a regular bundt pan for Christmas, as not every occasion needs a dragon cake. ๐Ÿ™‚

We had chocolate frogs for part of Honeydukes. It’s something that comes up all the time in the books. My friend Kim sent me a mold to borrow for the frogs and I used Ghiradelli and Baker melting chocolate. They were a big hit, even if they didn’t jump around like the ones in the movies and books. ๐Ÿ™‚

I made up a recipe for a mushroom tart, mainly because I really wanted it. I used marscapone and Boursin cheese mixed together and then spread on puff pastry. It was topped with sauteed mushrooms- baby bella and white, and caramelized onions. 

Kayla brought dragon spiced nuts, which were sweet and spicy. She also brought a large cooler full of sandwich fixings to go with the French Onino Soup. I also made nuts, but mine were weird, so we’ll just ignore them… ๐Ÿ™‚

We had Dementor Recovery chocolates, caramels, gummy worms/frogs/bears, PB eyeballs, Golden Snitches, jellybeans (but not the gross ones from the movies!), ginger candies, Ton Tongue Taffy, Acid Pops (Tootsie Rolls,) and Lemon drops. There was a lot of candy, but luckily, people took some home.

Belated Recipe Roundup

I blame not having power on Saturday for why this Recipe Roundup is late. Well, no power and this:

This would be what it looks like when a safety glass desk explodes with no warning. Specifically what it looks like when it shatters at 6:30 AM and you’ve already picked up three bags worth of glass. Luckily, no one was in the room at the time, so no injuries, other than glass cuts while cleaning up.

Fancy is sad and doesn’t understand why she isn’t allowed in the Husband’s office any more. We keep finding bits of glass though, so we can’t risk it. We’ve got a gate up for her and she’s been good about not trying to get over it. The Husband has a new desk, but it took most of Friday to get it cleaned and all of Saturday to get the new desk here and put together. Then we lost power in the evening for a bit. It was a rough end to the week. We’re hoping this weekย is better.

My throat has finally healed enough so I can eat normally. It still hurts a little bit if I eat something too hard, or too big of a bite, but it no longer feels like knives regularly. I also managed to get pictures of meals this week, even the ones we had before.

Theย Husband would like this sauce on everything. It was a very easy and quick recipe. I used full sodium soy sauce though, not reduced sodium, and stew meat instead of cut chuck roast. It came out super tender. We had basmati rice with it.

I went on a baking spree as well on Sunday and used lemon thyme in shortbread and made homemade chewy chocolate chip cookies.

The shortbreads were from the Better Homes and Garden book and the chocolate chips were from the May 2018 issue of Food Network. The little insert cookbook was 50 chocolate chip cookie recipes. The Husband likes his cookies chewy and these were his favorite so far.

I have a picture of the cookies in my new favorite way to eat them, in ice cream. Hudsonville Sea Salt Caramel ice cream, to be specific.

Mmm… I don’t have a picture of the shortbreads. It needed more lemon to compliment the herbs, but they were pretty good.

We were going to grill these burgers, but it was still over 80, so we broiled them instead. They have Chophouse seasoning, onions, and cheese in the burger patty. I made nice thick burgers this time.

We also had fruit and I had cucumbers. Still need to work on getting the whole dinner in the picture.

A quick mushroom cream sauce also made it on our menu. I could eat noodles again, so was very excited.

Because we are so classy, I made garlic toast with a hamburger bun. Hey, when carbs are needed, any bread will do in a pinch. ๐Ÿ™‚

Did you notice new colors? I finally found some on sale dishes and bought new colors of the Fiesta. Really, just the three colors in the featured picture, but we now have 13 dinner plates!

The chicken divan looked divine in the new turquoise bowl. ๐Ÿ™‚

I pulled some basil from the garden today to make Caprese salad for lunch. It was fun to use the purple basil too!

A goal for the summer or fall is to try to make my own mozzarella cheese. Supposedly it’s not that hard and I do have a “cheese cookery” book. Think of it, Caprese salad made completely by me… I could win the whole summer.

Speaking of winning, my friend and I are having a “Battle Cheesecake” at the end of July… Her husband said something jokingly about how if we were to ever face off in the kitchen, that everyone would win. So of course, we ran with it. Not surprisingly, we had several volunteers to be judges. We’re keeping it small, both in people numbers, and cheesecake categories. 3 cheesecakes each isn’t too much, is it? ๐Ÿ˜œย We’re having a fruit, chocolate, and an “out of the box” flavor category.

I asked the Husband if I should be practicing and he said “Do you want to win?” Ha! He’s much more serious about cheesecake than I am.

So although I did try a cheesecake recipe, I can’t give it away yet. I’ll put my recipes in a party post after the fact. My friend reads the blog, so I’ve got to be cagey… Feel free to link your favorite recipe in the comments. Maybe we’ll both end up trying it!
